First, cut the turkey wings
Cut the turkey wings into pieces. In the video above, there are step-by-step instructions on how to cut turkey wings. My parents gave me these turkey wings the last time we visited South Carolina and I’ve had them in my freezer for a while. After thawing them in the refrigerator, I washed and dried them. Using a chef’s knife I Separated the wing at the joint. These wings came with the tips removed (shocking as the wing tips are my favorite part!) Normally I leave the tips attached and separate the drum part.
Next, make your soup
In a frying pan, mix the soy sauce together with the brown sugar, pepper, apple cider vinegar, garlic, ginger and red pepper. Place the turkey wings in the oven One layer.
Bake
Cover the baking tray with foil and bake lightly and slowly. Turn the wings Half way through cooking, so that both sides are nice and tasty. After a few hours, remove the foil and turn off the heat. The soup will reduce to a sweet/salty/sticky glaze. Turn the wings in the sauce a few times during high heat to ensure they are all coated.
Ladle the soup over some rice and serve the teriyaki turkey wings with a side of green beans. That’s just an idea, you can use them however you want, I won’t judge.
